Sodium ascorbate

Sodium salt of ascorbic acid.

Antioxidant in meat products, beverages, and canned foods.

Provides vitamin C activity after conversion to ascorbic acid.

Minimal at permitted levels; contributes to sodium intake negligibly at typical use.

Permitted in EU Annex II.

Sodium ascorbate is GRAS in the U.S. and provides the same antioxidant and vitamin C activity as ascorbic acid. It is commonly used in meat products and canned foods where a less acidic salt form is preferred. U.S. regulation is under GRAS food substance listings.
